Complex and fine, slipping from vanilla and cinnamon to more toasty flavors
Tasting
The wood on the palate is well melted on notes of candied fruits and blond tobacco. This Origine Blanc finds a nice balance between the typical richness of Chardonnay and the vivacity of the sun of Provence

Vines and Terroir

Vine parcels downwards limestone plateaus, the vines take root in limestones colluviums finer and less stony than on the heights.

  •  The vine is trained in Guyot pruning to favor the fruiting of the Chardonnay, uncommon in Provence.
  • Un ébourgeonnage rigoureux des pousses inutiles est réalisé au printemps.
  • Rigorous disbudding of unnecessary shoots is done in the spring.

Vinification and maturing

  • Destemmed grapes
  • Maceration in pneumatic wine-press
  • Low press
  • Selection of the first fine juices
  • Juice is settled off at low temperature
  • Alcoholic fermentation in stainless steel vats at regulated temperature (16°C)
  • Malo-lactic fermentation is blocked
  • 60% of the wine is fermented and matured in french oak casks.
